When you negotiate with Edgar, you can pick different hair styles and colors as well as costumes. Hair style and color won't revert back, while costume changes are triggered through clauses or once Liora fulfills the conditions of having enough lewdness and a justification for putting one on.

There will be 1 + 3x3 costumes (3 per corruption tier), similar to that of SKA. However, in Liora you can progress on the costume corruption or not. Generally, all clauses are optional unless forced due to high Decay progression during a treatment negotiation.

Yes, you can get both outfits (or any number) and trigger them on different occasions. However, hairstyle and hair color are limited to one each, but you can pick different day restrictions.
The public demo is the MVP stage with limits of 15 in-game days. Early stage will introduce enough corruption so Liora could agree to sex and a new dungeon, mid-game will introduce more corruption and finish all dungeons except the final one, late game will set up triggers for endings and break up Liora with Rean, and ending stages will add endings based on factors like Liora's Lewdness, Rean's Decay, and Edgar's Prestige. Each stage has 3 updates over 6 months of development.
