Are sex scenes forced?

Depends on how well you do in the mini games. But generally, yes.

Can we pick and choose what LIs (love interests) we want?

Not quite yet; different girls have different ways of liking you, and there is an affection stat for each choice. Later development will include consequences/decision points but currently, you are not locked to a single love interest.

Is this a sandbox game?

No, the game has story choke points to keep the world cohesive and tight. While there will be choices and optionality, it cannot yet be called a sandbox due to planned narrative structure.

Can we skip mini-games?

Not yet. Once you complete content to the end of the release version once, you can choose the result of each mini game. However, some minigames have genuine content within them.
