That sounds like the end of the demo. You can still access the counter to the left of the boss's office to replay previous missions, but it seems like the story is quite over at that point.

When you reach 100 hypnosis, you can lose points in certain stats (Willpower, Lockpicking,...) or gain a passive skill. I'll add text to explain it.
