Where are the save files stored in the game?

Saves are written as plain files into the Saves folder inside your Character folder. Check <your Character folder>\Saves\ for the existence of auto_0.json, manual_001.json, and other save files.

Does setting the hours to maximum in the game activate an automatic mode?

Yes, leaving every slot at max effectively sets it to auto mode. The workday ends automatically when her energy runs out, and setting it higher than her energy capacity carries no penalty.
